Ingredients
- Spaghetti (100-125 g per person)
- Olivenöl (3-4 tbsp)
- Knoblauch (2-4 cloves, sliced)
- Chiliflocken (1 pinch to 1 tsp)
- Salt for the pasta water
- Optional: Parsley, lemon, Parmesan cheese
Instructions
- Salt the water heavily and cook the spaghetti.
- Slice the garlic thinly.
- Heat olive oil in a large pan over medium heat and add garlic; cook until golden yellow.
- Add chili flakes for 10-20 seconds.
- Before the pasta is finished, reserve a cup of pasta water.
- Transfer spaghetti directly from the pot to the pan, adding a splash of pasta water and toss for 30-60 seconds until glossy.
- Season to taste, adding salt and optional parsley, lemon, or Parmesan.
Notes
Monitor the heat carefully while cooking garlic to prevent bitterness.
