Ingredients

  • Spaghetti (100-125 g per person)
  • Olivenöl (3-4 tbsp)
  • Knoblauch (2-4 cloves, sliced)
  • Chiliflocken (1 pinch to 1 tsp)
  • Salt for the pasta water
  • Optional: Parsley, lemon, Parmesan cheese

Instructions

  1. Salt the water heavily and cook the spaghetti.
  2. Slice the garlic thinly.
  3. Heat olive oil in a large pan over medium heat and add garlic; cook until golden yellow.
  4. Add chili flakes for 10-20 seconds.
  5. Before the pasta is finished, reserve a cup of pasta water.
  6. Transfer spaghetti directly from the pot to the pan, adding a splash of pasta water and toss for 30-60 seconds until glossy.
  7. Season to taste, adding salt and optional parsley, lemon, or Parmesan.
